Beetroot Hummus with Veggie Sticks and Pitta

Great for dipping, spreading, or eating with a spoon, our Beetroot Hummus is the perfect mid-afternoon snack to get you through the day. We’ve paired it with veggie sticks and pitta for a high-volume snack that’s packed with fibre to keep you full until your next meal.

We’ve added a colourful twist to the classic creamy chickpea dip by combining beetroot with chickpeas, garlic, lemon, coriander, and black pepper until smooth and creamy. This adds extra micronutrients and fibre and brings a whole new flavour to level up your snack game.

We’ve used rapeseed oil in our Beetroot Hummus, an unsaturated oil. Replacing saturated fats with unsaturated fats can help to lower cholesterol levels.

A serving of our Beetroot Hummus with toasted pitta bread and carrot and cucumber sticks packs an impressive 11g of fibre and plenty of volume making this a satisfying snack to eat.

The best bit? Our beetroot hummus takes less than 10 minutes to make, so you can easily whip this up when you’re pressed for time.

Ingredients:

  • 90g beetroot, cooked
  • 200g tin of chickpeas, drained
  • 1 garlic clove, crushed
  • 1 lemon, juiced
  • Handful of coriander
  • 2 tbsp rapeseed oil
  • Freshly ground black pepper

 

To serve:

  • 1 wholegrain pitta, toasted
  • 1 carrot, peeled and cut into sticks
  • 1 celery stick, cut into sticks
  • 1 cucumber, deseeded and cut into sticks

 

Method:

  1. Roughly chop beetroot into chunks and place into a food processor with chickpeas, garlic, lemon juice, coriander, and rapeseed oil.
  2. Blitz until smooth. You may need to add a little water to help blend.
  3. Serve with toasted pitta and veggie sticks.
