Fig and Berry Porridge

Short for time but want a nutritious and tasty breakfast? Start the day right with our super quick Fig and Berry Porridge recipe. It’s a healthy breakfast option that is a source of fibre and will help to keep you full all the way until lunchtime.

The thing we love most about porridge is that the topping combinations are endless. For this recipe we’ve combined fresh figs and a warm homemade berry compote with flaxseed, toasted pumpkin seeds and sunflower seeds. to create the perfect sweet, fruity, and nutty combo that is packed with nutrients. However, feel free to switch up any of the ingredients with ones you have on hand.

We’ve also switched up our classic porridge recipe this week with creamy unsweetened coconut plant milk instead of cow’s milk to make this recipe vegan friendly.

Top Tip: Try to opt for ‘unsweetened’ plant milks over original versions. Some plant milk alternatives can have hidden sugars in them to sweeten the taste and preserve the drink for longer. Reducing these hidden sugars helps to keep your sugar intake low which is a great way to look after your heart health.

Fancy a bit of spice? We love porridge that packs a punch, and this recipe also tastes amazing in winter with a sprinkle of cinnamon, ginger, and nutmeg on top. Give it a try next time you feel the chill outside.

Ingredients:

  • 120g oats
  • 250ml unsweetened coconut plant milk
  • 200ml water
  • 30g frozen mixed berries
  • ¼ lemon, juiced and zested
  • 2 figs, sliced
  • 1 tbsp flax seed
  • ½ tbsp pumpkin seeds
  • ½ tbsp sunflower seeds

Method:

  1. Add oats, coconut plant milk and water to a saucepan and gently simmer for 8-10 minutes until thick and creamy stirring occasionally.
  2. Add berries, lemon juice and zest to a bowl and place in the microwave for 2 minutes to make a berry compote.
  3. Top oats with berry compote, freshly sliced figs, flaxseed, pumpkin seeds, and sunflower seeds and enjoy warm!
