Huevos Rancheros Recipe

Huevos Rancheros is a classic Mexican breakfast, translating to “ranch eggs”. It’s made up of fried eggs served on lightly fried tortillas - also known as tostadas - with fresh salsa.

This Mexican inspired dish is perfect for weekend brunch or light lunch when you’ve got a little bit more time to whip up something tasty. It comes together in less than 30 minutes and only uses a handful of ingredients. And it’s vegetarian friendly, so great for anyone looking to cut down on their meat intake.

We’ve added some tasty extras to our Huevos Rancheros recipe - combining the classic Mexican flavours with homemade tomato salsa, chilli and lime black beans, green chilli, and creamy avocado. Take our word for it, it’s definitely worth getting out of bed for!

This brunch recipe is also only 332 calories per serving and is packed with 18g of protein, 9g of fibre, and healthy fats from the avocado, so it will be a delicious and satisfying meal.

Ingredients:

  • 2 mini wholemeal tortillas
  • Low-calorie oil spray
  • 2 eggs
  • 200g black beans, drained
  • 1 lime, juiced
  • 1 tsp red chilli flakes
  • 40g avocado, peeled and sliced
  • 10g fat free yogurt
  • 1 tomato, diced
  • 1 tbsp fresh coriander, chopped
  • ½ green chilli, deseeded and sliced
  • ½ lime in wedges, to serve

Method:

  1. Heat a frying pan to a medium heat and spray with low-calorie oil spray.
  2. Add tortilla one at a time to the pan and fry for 1-2 minutes on each side to crisp up.
  3. Remove tortilla from the pan and add a few more sprays of low-calorie oil.
  4. Crack eggs into the pan and fry for 3-4 minutes until cooked.
  5. While the eggs cook, mash together the beans, lime juice, and red chilli flakes.
  6. Top each toasted tortilla with the chilli and lime black beans and one fried egg.
  7. Serve with avocado and a wedge of lime on the side and top the tortilla with a spoonful of low-fat plain yogurt, diced tomato salsa, coriander, and green chilli for an authentic Mexican taste.
